Pea and Mint Soup


Celebrate the peak of British pea season with a fresh, green pea and mint soup straight from the garden.

Ingredients:

  • 400g peas
  • 1 onion, chopped
  • 1 litre vegetable stock
  • Handful fresh mint
  • 2 tbsp butter
  • Salt and pepper

Method:

Sauté onion in butter, add peas and stock, simmer 10-15 minutes. Blend, add mint, season, and serve.

Cooking time: 25 minutes

Storage: Fridge 3 days; freeze for longer storage.
