New Potato and Radish Salad


Celebrate early summer produce with tender new potatoes and crisp garden radishes in a light vinaigrette.

Ingredients:

  • 500g new potatoes, boiled
  • 100g radishes, sliced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper
  • Fresh chives

Method:

Mix oil, lemon juice, salt, and pepper. Toss with warm potatoes, radishes, and chives. Serve chilled or at room temperature.

Cooking time: 20 minutes

Storage: Refrigerate 1–2 days.
