This savoury tart combines mild garden leeks with rich Stilton cheese, making a decadent winter treat. Preheat oven to 200°C. Fry leeks in olive oil until soft. Place pastry on a tray, top with leeks and Stilton. Whisk eggs and cream, pour over, and bake for 25–30 minutes.
