Fresh summer courgettes and garden tomatoes layered with cheese make a deliciously comforting gratin. Preheat oven to 190°C. Layer courgettes and tomatoes in a dish, drizzle with olive oil, sprinkle with cheese and thyme. Bake 25-30 minutes until golden. Cooking time: 35 minutes Storage: Fridge 2-3 days; reheat before serving.Ingredients:
