Tomato and Courgette Pasta Bake

Combine late summer courgettes and tomatoes with pasta and cheese for a warming bake.

Ingredients:

• 200g pasta
• 2 courgettes, sliced
• 2 tomatoes, chopped
• 50g grated cheese
• Salt, pepper, and olive oil

Method:

Cook pasta, sauté vegetables, mix with pasta, top with cheese, bake 20 minutes at 180°C.

Cooking time: 35 minutes

Storage: Fridge 2-3 days; reheat before serving.
