Summer Vegetable Stir-Fry


Use garden courgettes, peppers, and tomatoes in a quick, healthy stir-fry for a colourful summer meal.

Ingredients:

  • 1 courgette, sliced
  • 1 red pepper, sliced
  • 2 tomatoes, chopped
  • 1 onion, sliced
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • Salt and pepper

Method:

Heat oil in a pan, sauté onion, add courgette and pepper, cook 5 minutes, then add tomatoes and soy sauce. Stir-fry 3–5 minutes, season, and serve.

Cooking time: 15 minutes

Storage: Best eaten fresh; fridge 1 day if needed.
